Cheeseburger Soup

Kylee's Favorite Meal

1/2 lb. ground beef
3/4-1 C onion, chopped small
3/4-1 C carrots, canned (I use fresh, chop small/just cook till they are tender)
3/4-1 C celery, chopped small
1 heaping teaspoon each:
     Parsley (or chives) 
     Basil
     Garlic
     Cumin
6 Tbs. Butter
3 C Beef Broth (2 cans)
4 C frozen hash browns (I use southern style - 1 of the larger bags is usually 4 cups)
1/4 C Flour
2 C shredded cheddar cheese
1 1/2 C Milk (If I have whole milk - I use that, but I also use 1% too!)
1/4 C Sour Cream
Salt to taste
Tortilla Chips for dipping!  (Rolls work too)

Brown beef and drain
Add veggies and butter (carrots will take the longest)
Stir in basil, parsley, garlic and cumin
Add broth and potatoes
Simmer until potatoes are tender
Whisk in flour
Add milk, stirring until smooth
Reduce heat to simmer
Stir in cheese
Add sour cream last
Heat slightly (till sour cream is dissolved).  Don't Boil.
Dip chips, slurp or slather a roll :)
